I make a big bowl of this at the beginning of the week and have it for breakfast the next few days. My one year old daughter CHOWS this stuff. Like, it’s insane.
The greek yogurt has lots of protein and the chia seeds have lots of fiber, so it’s a really yummy and filling breakfast!
You could use maple syrup instead of honey, and top it with whatever toppings you want! It’s pairs really well with my recipe for Pumpkin Carrot Zucchini Chocolate Chip Muffins as well
Ingredients for Chia Seed Pudding
- 2 cup milk
- 2 cup vanilla Greek yogurt
- 4 tablespoons honey
- 2 teaspoon pure vanilla extract
- Kosher salt
- 1/2 cup chia seeds
- strawberries, hulled and chopped
Directions for Chia Seed Pudding
In a medium bowl, gently whisk the milk, yogurt, honey, the vanilla and 1/4 teaspoon salt until just blended.
Whisk in the chia seeds; let stand 30 minutes.
Stir to distribute the chia seeds if they have settled. Cover and refrigerate overnight.
The next day, spoon the pudding into bowls or glasses; top with strawberries (or other berries, coconut, or whatever sounds good to you!).
