My husband has lots of early mornings for work, and these breakfast egg sandwiches are super quick and filling – the perfect combination to start his long days off right! They’re also a great option for kids who might not be morning people and need a filling breakfast on the go. Convenience on hectic school mornings is a must! What You Need for Freezer Breakfast Egg Sandwiches

- breakfast sausage patties (if sausage isn’t included in your casserole)
- english muffins

- parchment paper or sandwich size ziploc bags
The key to a great breakfast sandwich is a delicious breakfast casserole. We definitely recommend this scrumptious breakfast casserole – it’s the perfect balance of cheesy goodness and nutrition. You can include breakfast sausage into your egg casserole, or you can use separate sausage patties just depending on your family’s preference. If you’re trying to sneak some more protein into your little kiddos’ diet, this is a great place to do so. You can hide almost anything in an egg casserole in a sandwich!
Assembling the Breakfast Sandwiches
I love how customizable these freezer breakfast egg sandwiches are. If you have some kiddos that don’t like sausage, no worries! If you have someone who hates cheese, no problem! Our standard breakfast sandwich starts with a toasted english muffin, then a layer of egg casserole (just a square cut about the size of the english muffin), a sausage patty, a slice of cheddar cheese, and finally the other half of the toasted english muffin. Feel free to mix and match whatever components work best for your family!
Storing the Breakfast Sandwiches
We find that storing the breakfast sandwiches in the freezer is the easiest option for our family. I either wrap them in parchment paper or seal them in ziploc bags, whichever I have on hand. (Here’s a tutorial on how to wrap it if you needed some guidance like I did!) Then just write on the wrapping if anything is different than the standard sandwich, and they’re good in the freezer for up to 3 months. When we’re ready to eat one, we just grab it from the freezer, pop it into the microwave for 2 minutes, and then voila! A healthy, homemade, easy breakfast for on the go.
