Hawaiian Haystacks were a staple at our house growing up. Warm, sticky rice covered with creamy chicken sauce topped with what felt like a million different toppings. With ten kids in our family, it was a constant battle for my mom to find something we would all eat without complaining. But Hawaiian haystacks are so versatile with such a variety of topping options that no one complained on haystack night! These Hawaiian haystacks with ranch are a slightly elevated version of the loved dish I grew up eating!

The thing that makes these haystacks shine is the toppings! You can customize these haystacks with literally any toppings you want. Some of our favorites are cheese, pineapple tidbits, sliced olives, diced green onion, chopped celery, shredded coconut, slice almonds, diced fresh mushroom, Chow mein noodles, diced tomatoes, mandarin oranges, or soy sauce.

How to Make Hawaiian Haystacks

First, in a large saucepan melt butter over medium heat.

Next, slowly whisk in flour and salt until smooth and thick.

Slowly add in chicken broth while whisking until smooth. Continue to cook while whisking until thick like gravy.

Add sour cream, Ranch seasoning, garlic salt, and cooked chicken breast. Stir in pepper if desired.

Serve over cooked rice with desired toppings.

Ingredients

  • ½ cup 1 stick butter
  • ½ cup flour
  • 1 tsp salt
  • ½ cup sour cream
  • 4 cups chicken broth
  • 2 tsp of dry Ranch Dressing seasoning packet
  • ¼ teaspoon garlic salt
  • 2 cups cooked and shredded chicken breast
  • freshly ground black pepper to taste
  • cooked rice

Instructions

  1. Melt butter over medium heat in large saucepan.
  2. Slowly whisk in flour and salt until smooth and thick.
  3. Slowly whisk in chicken broth until smooth. Continue whisking until thick like gravy.
  4. Add sour cream, Ranch seasoning, garlic salt, and chicken.
  5. Stir in pepper if desired.
  6. Serve over cooked rice with desired toppings.
