These delicious egg frittatas are an adaptation of my favorite breakfast casserole, but cooked in muffin tins for individual serving sizes..

A frittata is essentially an Italian omelette. The word “frittata” comes from the Italian verb “friggere,” which means “to fry.” Unlike a traditional omelette, which is cooked by folding the eggs over the fillings, a frittata is cooked slowly in a skillet, often in the oven, without flipping.

This cooking method allows the frittata to take on a slightly crispy, golden-brown crust on the outside while remaining tender and creamy on the inside.

Frittatas are beloved for their versatility. You can tailor them to your taste and the ingredients you have on hand. They are a great way to use up leftover vegetables, cheeses, or meats. This delicious breakfast egg frittatas recipe is sure to be a hit at your next breakfast, brunch, or even dinner! The cheesy goodness and individual serving size make it the perfect potluck dish.

Ingredients

  • 1 stick butter or margarine, melted
  • 10 eggs
  • 1/2 cup flour
  • 1 tsp baking powder
  • Dash of salt
  • 1 pint small curd cottage cheese (this is the secret ingredient!)
  • 1 pound shredded cheese: Mexican blend or monterey jack/cheddar blend
  • 8 oz chopped mild green chilis (2 small cans)
  • 1 lb sausage, bacon, or other meat

Instructions

  1. Cook the meat and cut into bite-size pieces.
  2. Lightly beat eggs in a bowl, then blend the flour, baking powder, and salt into eggs.
  3. Add melted butter, chilis, shredded cheese, and cottage cheese. Mix until just blended.
  4. Stir in meat.
  5. Grease muffin tins
  6. Bake at 350* for 45 minutes, or until eggs are done. (Lightly browned on top and set in the middle.)
